Eggless wonders

Today’s treat was going to be a lemon drizzle cake, except for the fact that I’d forgotten to buy eggs! So rather than crying over unbaked cakes I thought I’d go eggless! I’m hoping it will make a yummy vegan cake for the collection – although I used cows milk!

Rapunzel.. Rapunzel let down your hair!

I was asked to create a Rapunzel cake for a 6-year-old… with emphasis on the hair and lots of glitter! They also wanted a doll shaped cake, rather than a round one… and this is what I created!

The skirt was a yummy vanilla sponge layered with strawberry jam and buttercream, and finally covered in fondant icing.

Busy, Busy, Busy!

This week seems to be manic, I have cupackes to bake for a meeting tonight, then I have a sandcastle cake for the weekend, and after that I have a pig cake, a disney wedding cake and a plane shaped cake!

So cupcakes… normally I use my ol’ faithful muffin recipie, but have run out of oil, so I am going to try a new recipie – well I say new.. it’s more of an old one that was used for smaller cupcakes so I have just adjusted the recipie.

  • 150 g butter, slightly softened
  • 150 g suger
  • 3 eggs, lightly beaten
  • 150 g self-raising flour, sifted
  • 1 tsp vanilla extract
  • 1 tbsp milk
